The process
The process is not sophisticated, but needs to be carried out carefully.Towards the end of fall, the still green olives are harvested by our local workers, all raised with that knowledge as part of their lives. The "fruits" are then transported at the end of each working day at the press. The leaves and branches are removed by means of cold water. Subsequently, pressure is applied in a hydraulic press machine, without the use of heat, warm water or solvents. The temperature throughout the whole procedure remains below 27 degrees (C).
